African Trails

We explore Footscray on our journey through Africa. With a population of over 5000 African decedents it is the perfect place to try some authentic bread, buy some berbere spices and get your hands on the original coffee from Ethiopia.

East African cuisine has had influences from Indian, French, British, Egyptian and Turkish flavours to name a few. In a journey through the sub Saharan Africa, taste the blends of spices, in a bowl of fufu, a warm piece of Injera (Ethiopian bread) or matoki (lamb stew). Sudan the more common foods kisira (a type of pancake), rice, asida (ugali, or stiff porridge), and fish. In Ethiopia, typical foods would be injera/firfir, kichah (spiced pancake), dabo (bread), and bula (ensete, or stiff porridge). These are normally served with a variety of hot sauces (wat, or watt) on one large tray for the entire family.

9th - 20th September. Exclusive small group tour, fully escorted by an Italian food guru Jane Del Rosso. Exploring Umbria and Puglia with hands on cooking classes, truffles, wine and olive oil tours and much more.

Day 1 – 12 Sep Rome - Arrive in Perugia  Umbria

Arrive into Rome by 13:00 hours. Take the 1700 hours train from Rome airport to Perguia.

Arrival at the country farm (Perugia, Central Italy, Umbria, near Tuscany). Check-in your apartment at 21:00 hrs

 

Day 2 – 13 Sep Cooking + Truffles Tours
Hands-on cooking class starts around 10:00am. You will prepare a four course lunch that you will eat at the end of the class, accompanied by our wines.


The tour takes place from 15.00 to 19.00.
Afternoon: Your guide will drive you in the Educational itineraries on the Truffle track, they are fascinating and unique experiences to discover the mysterious world of the Truffle. The guided visit is run by experts, who will take you through the entire itinerary from the digging up of the Truffle to its processing and use in cooking, teaching you how to distinguish and taste its different varieties.

 

It includes: Demonstration of Truffle hunting with a dog, Tour of the farm and visit of the small museum, Tasting of cooked dishes and local wine tasting. Guided visit in a medieval village in Valtiberina.

 

Day 3 -  14 Sep Cooking + Wine and Olive oil Tour 
Hands-on cooking class starts around 10:00am. You will prepare a four course lunch that you will eat at the end of the class, accompanied by our wines.
The wine tour take place from 15.00 to 19.00. It is a wine tour in a winery that produces Sagrantino di Montefalco DOCGS. You will have a guided tour of the vineyard, cellars finishing up with a test of local Umbrian specialties and the wines. You will also visit the medieval cities of Bevagna and Montefalco. Ourolive oil tours include visits to family-run oil mills in the most famous Umbrian oil regions with tasting of the local produce along with accompanying local food products.

 

Day 4 – 15 Sep Cooking + Assisi Tour
Hands-on cooking class starts around 10:00am. You will prepare a four course lunch that you will eat at the end of the class, accompanied by our wines. 
The excursion take place from 15.00 to 19.00. You will visit the mystical city of Assisi, a beautiful medieval town based on Mount Subasio, overlooking a peaceful Umbrian landscape. The tour will allow to get to know the main landmarks where st. Francis lived. You can see the st. Francis Basilica whose superior walls were frescoed by Giotto and Cimabue. You will also visit the Eremo delle carceri, one of the oldest Franciscan convents.

 

Day 5 – 16 Sep  Departure Perugia  Umbria to Leece

Transfer to the station for your train to Leece. Arrive by about 22.00 and transfer to your hotel for the night

 

Day 6 - 17 September Leece – The Castle

Morning at leisure, our day begins at noon when we meet at Porta Napoli.  Your luggage will be transfer to your room at the castle.

From Porta Napoli, we will take a short walk to the cooking school in Lecce located at the home of our instructor, Silvestro, where you’ll enjoy a light lunch of local cheeses, grilled and pickled vegetables, preserved meats and a variety of regional wines.  You will have an opportunity to see where it all began and acquaint yourself with your instructor, the staff and your fellow students.  Once lunch is finished, our drivers will escort you to the castle where you’ll settle in and be given a tour, during which you will hear the unique history of the castle and the role it has played in the history of the town.

Once everyone feels at home, we will head into one of the most striking kitchens you’ll ever cook in to make our first fresh pasta from scratch and then create a 5 course dinner before sitting down to the beautiful table on the baron’s stone loggia. It won’t be our fault. The chairs will be too comfortable. The wine poured a little too heavy-handed. The conversation a little too lively. We’ll likely go late. We always do.

 

Day 7 - 18 September The Castle

We’ll break in two: half of us will go to Salvatore’s little local bar to enjoy an Italian espresso and hear a lesson on coffee culture in the South, while the other half will head to the market to meet Serena, our castle greengrocer.  There we will discuss the fruits and vegetables of the Salento, helping you to become better consumers of Italy and Italian culture, both this trip and forever more.

After receiving your personalized apron, students will head into the kitchen to make hand-made pasta from scratch before dressing it with olive oil-based sauces famous in Southern Italy.  We’ll make lunch, then depending on the weather, either set up tables outside among the baron’s fruit trees or on the stone loggia.  Expect lunch to run long, the conversation an international mix of seasoned travellers.

After lunch we will take a break – perhaps for a nap or a quick dip in the pool – before we resume with a chalkboard talk on our local food, wine, history and language.  Moving back into the kitchen, we will prepare a massive feast.  We will make a sauce for our handmade pasta, follow that by cooking rabbit in the baron’s stoneplace or, perhaps grilling seabass on his family’s crested grill, and finish with something sweet, like local fruit baked in clay pots and then doused with fresh ricotta.

Day 8 - 19 September The Castle

We’ll have breakfast as we always do: fresh fruit, local pastry, espresso, local yogurt and marmelades, all consumed while you’ll be able to catch up online.  An Ipad and a peach? Yes please!

You’ll visit Armando and Mario, our local butchers and we’ll use their meat counters to discuss the butchering process, how to choose the best cuts of meat and the technique to cook each to perfection.  With straw baskets full of fresh produce, we will enter the kitchen to make yet another pasta shape, so that slowly you begin to master it.  We’ll start to build lunch, one course at time, cradling and ladling into giant ceramic crocks and serving bowls for the daily feast.

After the afternoon break, we will walk the country roads together, among some of the 70 million olive trees of the Salento. We’ll discuss the history of the olive, of olive oil and how much of what you know about the olive oil sold at your local supermarket is more marketing than truth.

After our discussion, we will return to the kitchen to craft another mouth-watering, four-course meal.  We’ll compose dinner, each of taking a task in the kitchen, from chopping tomatoes to slicing peppers to browning the chicken thighs to popping the olives with a water glass to remove the pits.

After our meal, we might fire up the baron’s wood burning oven and enjoy an evening down by the pool.

Day 9 - 20 September The Castle

Right after breakfast we’ll visit a high quality olive oil producer, to learn about tasting olive oil.  Tasting fine olive oil can be unpleasant but in a matter of seconds you’ll learn to ascertain an extra virgin’s quality and cement forever your ability to identify the great artisanal oils from the impostors.

We’ll shop, make pasta, prepare lunch and start to see the benefits to three-hour lunches, when tensions melt away and you can begin to really converse at a more human pace.  At dinner, we’ll barely need to tell you much anymore, so familiar with our Southern Italian foods and rhythm.

Day 10 - 21 September The Castle

In the morning we’ll visit the market and gather the ingredients needed to make delicious sandwiches of home-made sausages, roasted bell peppers, local cheeses and a [two-napkin], garlicky [can we say garlic] vinaigrette that the crusty bread absorbs. We’ll pack the picnic baskets and head for Otranto, one of the prettiest beach towns in all of Italy. We’ll eat lunch on the ancient stone marina and if the weather is good, you can even enter the water.   On a sunny day, it’s hard to imagine a more beautiful place.

After lunch you’ll see Europe’s largest mosaic, which has been designated an UNESCO world heritage site, and have the opportunity to souvenir shop and savour gelato at one of our favourite shops, a store open since the 1950’s.  We’ll head back to Lecce where you have the evening off to catch up on your shopping or head out to dinner with the other students.

We’ll head back to the castle and meet underground, in the baron’s recently discovered and renovated stone olive mill, hidden under the streets of the town. Tonight the staff will prepare dinner, a simple but robust meal that mimics “Una domenica in famiglia,” or a big Sunday lunch at mom’s house.  As always, the wine will flow, the corks popping late into the evening.

Day 11 - 22 September The Castle

After breakfast and pasta making, we’ll discuss why the Mediterranean stands out as a sea and how fish anatomy drives cooking techniques.  We’ll make fish stew, Salento-style (hint: it’s much fresher and brighter in flavour than other fish soups you may know, and much faster to make, as well). And nothing’s better with fish soup than a crisp cold rosato, the oldest and most famous pink wine in all of Italy.

After the break, our last night together is your opportunity to put your new skills to work  and compose a meal unique to your time with us.  Tonight, the students will select the menu as a group: from antipasti through desert, the dishes and wine pairings are yours to choose.  We’ll  open some special wine and dinner will run late and likely loud.  At the end of the night we give you your recipe books and gifts.  It’s our least favourite part of the week, but you can always come back to visit your friends in Italy again (check out our Trip Advisor reviews to see how often this happens).

Day 11 - 23 September The Castle – Leece - Rome

After breakfast, you will say farewell to the staff .Our drivers will take you back to Lecce and just as you think your time here is over, you will unpack a lunch and gifts made especially for you by the staff to help you remember the time you spent with us.

You can either take the train to Rome or head back into the historic centre to continue to enjoy one of the prettiest cities in Italy.

The kitchens of the Topkapi palace in Istanbul invented and devised the most sumptuous feasts. From the elaborate Royal Mutfaklar recipes originated the simple cooking techniques and honest final products - food not hidden under sauces or masked by heavy-handed use of herbs or spices.

We begin with exploring Brunswick’s bustling Sydney road, the epicentre of cultural Melbourne. Flavours of the Middle East are prominent here and we start by soaking up the atmosphere with a plate full of Turkish ‘meze’ and a strong cup of Tea infused with cinnamon. We try authentic flavours at some of the oldest family owned Turkish eating establishments in Melbourne.

Taste the authentic ‘Pide’ – Turkish pizza, ‘Dolma’ and ‘Pilaf’- spiced rice. To finish, the sweetness of beautifully flavoured ‘Baklava’ and ‘Muhallebi’ – traditional milk puddings with a cup of Turkish coffee.

When Japanese people are ready to eat, they say "Itadakimasu" - meaning "I am now starting to eat". So join Yuka as she teaches you the perfect Sushi roll, and dumplings and much more.

When Japanese people are ready to eat, they say "Itadakimasu" - meaning "I am now starting to eat". The Japanese cuisine is usually defined by its combination of food staples like noodles and rice with soup and a okazu (meat, fish, vegetable, tofu) to add flavor to the staple. Flavoring is often done with low fat, high sodium things like soy sauce, miso, and dashi. Rice and noodles are a staple of Japanese food.

In Japanese home-style cooking, a lot of fresh, seasonal fish and vegetables are cooked and people enjoy the natural cycle of the seasons. 

So join Yuka as she teaches you the perfect Sushi roll, and dumplings and much more.

So remember to thank Yuka at the end. "Gochiso sama" is the phrase meaning "Thank you for the feast"

Class Duration
The course is 3.5 hours in duration. 

Cooking 

All participants will be given the opportunity to prepare and cook.
Participants will be provided with knife kits, and utilise commercial cooking equipment supplied by our venue. 

Recipe Pack 

Each participant receives a recipe pack so they have all the information to prepare this meal at home for friends and family.

The class is not a cooking course it is an informal session where we learn the basics and share our experiences. We are not professional chefs just home taught by our families and enjoy cooking and celebrating with food. Come for an afternoon of fun, and celebration with food.
